Recipe Chazuke

Chazuke

Chazuke is a simple Japanese dish made by pouring green tea, dashi, or hot water over cooked rice, roughly in the same proportion as milk over cereal, usually with savoury toppings.


Common toppings include Japanese pickles such as tsukemono, umeboshi, nori (seaweed), furikake, sesame seeds, tarako and mentaiko (salted and marinated Alaska pollock roe), salted salmon, shiokara (pickled seafood), scallions and wasabi.

Ingredients:
1 cup steamed rice (preferably brown rice or sushi rice, though any kind will do)
1 cup brewed sencha or genmaicha Japanese green tea
Assorted toppings, such as steamed or sauteed vegetables, seafood, tofu (diced or fried), tempeh, seaweed flakes, mushrooms, bamboo shoots, pickled vegetables, toasted sesame seeds or savory seasonings
A splash of soy sauce or shoyu (optional)
